Hummus

Fresh hummus is pretty amazing stuff, but you'll definitely need a powerful blender or food processor to manage as it gets very thick by the end. This recipe deliberately keeps it very simple, but hummus is a great platform to experiment with adding various other flavors (e.g., red pepper flakes, dill, etc.).

  • 5 cloves
    garlic
  • 30 oz
    garbanzo beans (pre-cooked, canned)
  • 1 cups
    olive oil, extra-virgin
  • 1 cup
    tahini
  • ½ cup
    lemon juice
  • 1 tsp
    salt
Using a food processor or a powerful blender, add one ingredient at a time, blending to a purée after each.

    olive oil, extra-virgin
Transfer to a serving bowl, and drizzle the remaining olive oil over the top.
