Shrimp with Sweet Potato

This is a delightful dish in all the various flavors it brings. Sweet from the potatoes, salty from the bacon, a little bit of the sea from shrimp... all mixed together in a single, delightful package.

    sweet potatos / yams (chopped)
  • 1 cup
    yogurt, greek
  • 2 tbsp
    maple syrup
  • ¼ tsp
    cinnamon
Boil the sweet potatoes until soft (about 10 minutes). The purée in a food processor with the yogurt, honey, and cinnamon. Set aside until needed.

    bacon
  • 2 tbsp
    butter
  • 1 tsp
    salt
  • 1 tsp
    black pepper
Roughly chop the bacon into 1" pieces and cook until crispy in a large skillet. Once cooked, dice and set aside in a serving bowl.

Melt the butter in the same skillet over high heat, and season with the salt and pepper. Drop the de-shelled, raw shrimp into the pan and cook, stirring constantly. Cook until the tails have only just curled into a "C" shape, and the flesh has only just turned pink. Be careful not to overcook!

Optionally serve by placing several small dollops of sweet potato on the plate with a single shrimp on each. Sprinkle generously with bacon bits.
