Gluten-Free Flour

This gluten-free flour recipe serves well for most general-purpose cooking needs in thickening soups, making roux, and similar uses. It works adequetely for deep-frying, but doesn't replace the real thing for baking, pie crusts, etc.

  • 24 oz
    white rice flour
  • 7½ oz
    brown rice flour
  • 7 oz
    potato starch
  • 3 oz
    tapioca starch
  • ¾ oz
    nonfat dry milk powder
Mix all the ingredients and store, refrigerated, in an airtight container.
